In a shocking turn of events, celebrated chef Paul Longworth, known for his renowned fine-dining establishment Rhubarb Le Restaurant in Singapore, decided to transform his Michelin-starred venue into a relaxed eatery named Encore by Rhubarb. This gamble comes at a time when the culinary landscape is shifting dramatically.

From Three-Course Formalities to Comfort Food

For a decade, Longworth's restaurant earned acclaim, consistently highlighted in the Michelin Guide since its inception in 2016. However, amid escalating challenges in the restaurant industry and the aftermath of the pandemic, he realized a change was necessary.

"We weighed our options: close down, go through with the current format despite market pressures, or reimagine our direction,” he explained. The choice to pivot into a more casual dining concept wasn’t impulsive; it was a calculated move to remain relevant.

Embracing Evolution Over Tradition

The newly launched Encore by Rhubarb features a simplified yet innovative menu that showcases core ingredients while maintaining high quality. Longworth described it as an "evolution." "Instead of focusing solely on premium cuts like ribeye, we explore a variety of more economical ingredients such as lamb shoulders and pork belly," he says, emphasizing creativity within a new price range.

The Cost of Change

In giving up his Michelin star, Longworth admits it's a significant loss, yet liberating. "A Michelin star is hard to earn, but it shouldn't define our essence as chefs or our restaurant. Our main aim is to provide memorable experiences without the weight of prestige hanging over us." He shared that the move reflects a broader trend in fine dining, where many acclaimed restaurants are struggling to survive in a saturated market.

A Culinary Crisis?

Longworth isn't alone in this struggle—numerous fine dining establishments in Singapore have become casualties of the current climate. Nine other Michelin-starred restaurants recently lost their stars, highlighting intense market pressures.

With significant closures in the fine-dining sector, Longworth expresses concern: "It’s heartbreaking to see respected establishments close. It reflects a broader reality of how the industry is evolving post-pandemic." This prompted him to fill a gap in the market, craving for quality meals at reasonable prices. Encore's course offerings start at an incredible $48 for lunch and $88 for dinner.

Although the transition to a casual dining experience is an exciting chapter, Longworth remains open to the possibility of returning to fine dining. "Perhaps in the future, we may want to revisit that path, but right now, I’m focused on making this venture a success for years to come."
