A new groundbreaking study reveals that just a cup and a half of leafy green vegetables could significantly lower your risk of atherosclerosis-related vascular diseases. Conducted by researchers at Edith Cowan University, the University of Western Australia, and the Danish Cancer Institute, this research highlights the vital role of greens in heart health.

Atherosclerotic vascular diseases (ASVD), a major subgroup of cardiovascular disease, are responsible for a shocking number of deaths around the globe—claiming one life every 12 minutes in Australia alone, according to PhD student Ms. Montana Dupuy.

The research points to Vitamin K1, abundantly found in leafy greens like spinach, kale, and broccoli, as a potential hero in the fight against ASVD. "These vegetables may prevent the vascular calcification processes associated with cardiovascular disease, and they’re easy to add to your daily meals," Ms. Dupuy explained.

But that's not all—Vitamin K1 may also boost musculoskeletal health by strengthening bones. Dr. Marc Sim, a Senior Research Fellow at ECU, emphasized that incorporating just a cup and a half of these greens could enhance your Vitamin K intake and lower your cardiovascular risk.

Research findings showed that women consuming about 30% more Vitamin K1 than recommended experienced a lower long-term risk of ASVD. Intriguingly, the study also revealed that individuals with higher Vitamin K1 intake showed less thickening of neck blood vessels, potentially indicating a reduced risk of atherosclerosis.

The duo's findings pave the way for future projects at ECU's Future Foods and Digital Gastronomy Lab, where they plan to create specialized meals packed with Vitamin K1-rich greens for clinical trials aimed at improving community health.

Dr. Liezhou Zhong, a Postdoctoral Research Fellow, added, "Our goal is to transform our research data into tangible products that address nutritional needs, particularly for communities like aged care residents."
