Interestingly, while gelling agents like gelatin were associated with a decreased risk of death, modified oils, protein sources, and fiber showed no substantial link to mortality rates.

Published in the journal eClinicalMedicine, these findings represent a first-of-its-kind assessment of the impacts of such a wide range of additives on overall health.

The data was drawn from the UK Biobank, tracking adults from 2006 to 2010, with an average follow-up of eleven years. Among the participants, about 20% of their diets consisted of ultra-processed foods, which typically contain ingredients not found in a home kitchen. Shockingly, by the end of the study, over 10,000 participants had passed away.

The research discovered a clear correlation: as the portion of ultra-processed food in participants' diets exceeded 18%, their risk of death markedly increased.

Self-Reported Data and Further Implications

While it's crucial to note that the consumption data relied on self-reporting—which can be unreliable—the study reinforces previous connections between ultra-processed foods and serious health concerns like obesity, heart disease, and even certain cancers.

In a related finding last month, UK scientists highlighted that individuals who shunned these unhealthy foods lost twice as much weight compared to those who incorporated them into their diets.
